Chocolate Peanut Butter Balls

25 chocolate wafer cookies, finely crushed
1 cup plus 2 tbsp. confectioners’ sugar
1/3 cup honey
¼ cup plus 2 tbsp. smooth peanut butter

In a large bowl, mix cookie crumbs and 1 cup of the confectioners’.

In a medium bowl, whisk together honey and peanut butter until well combined.
Add to cookie crumb mixture and stir well. (Mixture may be crumbly at this point)

With your hands, shape mixture into 1" balls. (Mixture should b hold together
as you shape it)

Set balls aside at room temp. until ready to serve, or store them in an
airtight container at room temp. for 2 to 3 days.

Just before serving, roll balls in remaining 2 tbsp. confectioners’ sugar.

Makes 36 balls
