(Sweet Rice Pudding)
2 cups water
1 tbsp. margarine
1/4 tsp. salt
1 cinnamon stick
1 cup uncooked Arborio or other short-grain rice
2 1/2 cups milk
1/3 cup sugar
2 tsp. grated lime rind
1/2 cup golden raisins
1 tsp. vanilla extract
Combine first 4 ingredients in a large saucepan; bring to a boil. Stir in
rice. Reduce heat to medium, and cook 10 minutes or until liquid is almost
absorbed, stirring occasionally. Discard cinnamon stick. Stir in
milk, sugar, and rind; bring to a boil over medium heat, stirring
frequently. Reduce heat to medium-low, and cook 25 minutes or until
mixture thickens and becomes creamy, stirring frequently. Remove from
heat. Stir in golden raisins and vanilla.
