1 tbsp. margarine
4 cups diced peeled Granny Smith apple
1/2 cup packed brown sugar
2 tbsp. fresh lime juice
2 tbsp. water
1/2 tsp. ginger
1/8 tsp. salt
2 cups low-fat cottage cheese 1/4 cup mascarpone cheese
1/3 cup sugar
1 tsp. vanilla extract
Melt margarine in a large nonstick skillet over medium-high heat. Add apple
and the next 5 ingredients, and cook 12 minutes or until liquid is almost
absorbed. Remove from heat.
Place cottage cheese in a food processor, and process until smooth. Add
mascarpone, sugar, and vanilla, and process until smooth. Spoon 2 tbsp.
cheese mixture into each of 6 parfait glasses, and top each with 2 tbsp.
apple mixture. Repeat procedure with 3 tbsp. cheese mixture and remaining
apple mixture, ending with remaining cheese mixture. Cover and chill at
least 4 hours.
