1 lb. fresh strawberries, washed
1pt. fresh blueberries or blackberries, washed
¼ cup orange juice
3 tbsp. sugar
1½ cups flour
½ cup whole wheat or pastry flour
½ tsp. salt
4 tsp. baking powder
2 tsp. margarine
4 tbsp. oil
1 cup milk
1½ cups vanilla yogurt, optional
Hull strawberries and slice into a bowl. Add blueberries or blackberries. Mix
in orange juice and sugar to taste. Set aside for 30 to 60 minutes.
In medium bowl mix together flours, salt, baking powder and additional sugar,
to taste, if desired. Use pastry blender or a fork to cut margarine and
oil into flour mixture until it resembles coarse meal.
Add milk, stir just until incorporated and there are no lumps. Form 8
biscuits by dropping well rounded quarter cupfuls onto greased cookie
sheet. Bake at 425° for 15 to 20 minutes or until biscuits are done. Cool
on a wire rack.
Use a serrated knife to gently slice off top a third of each biscuit. Top with
berries and juice. Lay top third of biscuit on berries. Top with more of
berries and juice. Place remaining berries around each biscuit. Garnish
with yogurt, if desired and serve immediately.
